These wraps are my go to on a very busy day, not only because they are easy to make but they are packed with protein which makes me feel “full” for longer. I like them as they are or you can serve them with your choice of salad or a smoothie.
- 1 tsp water
- 15-ounce can rinsed and drained Great Northern Beans
- 1 tbsp soy sauce
- 1 tbsp white balsamic vinegar
- 2 avocados, halved and pitted
- 2 tbsp lime juice
- 2 tbsp fresh parsley chopped
- 1/2 jalapeno pepper, diced
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp onion powder
- salt and pepper
- large tortillas
- tomatoes, fresh spinach
In cast iron pan add water and beans, and sauté until warm, add soy sauce and stir. until it has cooked away, add vinegar and cook, stir couple of times, until the liquid has cooked away. Remove from the heat and mash with a potato masher.
Mash the avocados in a separate bowl, add mashed beans, lime juice, parsley, jalapeño, and spices and mix until combined.
Warm up the tortillas, spread a layer of bean mix, tomatoes and spinach, and wrap like a burrito. Cut in half and serve.
