Purple sweet potatoes have a lot going for them nutritionally. In addition to antioxidants, they are packed with fiber, vitamin C and potassium. This is one of my favorite ways to eat purple potatoes. I like them simply with garlic/olive oil sauce.
- Purple sweet potatoes (4-5 medium size pieces)
- 00 Flour (amount is measured by the weight of potatoes, 1/3 of total weight)
- 1 tablespoon of olive oil
- Salt TT
Bake the potatoes at 350F, depending on their size, medium potatoes bake for about 30 minutes, large 45 minutes to an hour. When soft, take them out of the oven and be careful handling them they are very hot. Cut them in half, scoop out the inside and pass through a potato ricer. Weight them to see how much flour you’ll need.
Add the flour, olive oil and salt and mix well into smooth dough. Then proceed with the gnocchi shaping. Divide the dough into 4 parts, roll each part into rope like shape. Cut into 1 cm size pieces, then roll each piece over the gnocchi board. Place on a floured baking sheet.
Cooking the gnocchi: in a large pot of salted boiling water cook the gnocchi, they are ready when they float to the top. Drain and serve with your favorite sauce. Enjoy!
